This tune has been covered by so many even myself, you can listen here https://www.youtube.com/watch?v=6VtDX7iGeBU everyone hears songs differently, some may like the instruments I used and some may not but it was my choice and made it my version. The beauty in these keyboards is that you can have fun just exploring the sounds and styles within them and it helps to getting to know your keyboard better.
I thought I saw that you own a Genos2 IMO the best arranger keyboard on the market at present, I also have the Genos 2 but I recorded my version of this song on a Tyros 5 so your keyboard will have much the same sounds and style. If you own a different keyboard then exploring it is the same.
My advice is listen to the original version and a few cover versions, then explore your keyboard for the sounds you like and make it your own.

You should download the Genos2 playlists from Yamaha which call specific registration banks composed by Yamaha (included in that free download).  There is a recommendation for complete registration bank for Once Upon a Time in the West:

/PlaylistForGenos2/Movie&Show/Once Upon A Time In The West.T559.rgt

The bank uses the Ethereal Voices style and contains right and left hand voices and multipads that occupy 7 registration buttons: Intro, Opening Scene,Verse 1 Soprano, Bridge Horns, Verse 2, Verse 3, Ending.
