For Carnival Is Over, I like to add in an extra Guitar via the Multipads. Off the top of my head it's one of the ones that's got a name like StBassSlow. A strumming guitar that also has the virtual guitarist adding a soft alternating bass note. I usually add it to Pop Guitar Ballad.

I'll give those styles a go too, thanks for sharing them.
