Playing the keyboard: with style or with midi sequence?

Hi, till now I have always played my keyboard using the styles and/or Mpad. Sometime I change/created or assembled new styles and/or Mpads, for my own taste. Now I'm trying to create a new song, but working only with a style and/or a multipad is not sufficient to create a (string)background for the song to create to my own taste. So I guess that an extra track could or should do the job?
But when I create an extra track, than it is needed to follow the recorded track on every beat, and makes it difficult/impossible to deviate from it. So it feels as if the flexibillity is less than when playing only with styles/multipads.
What are your experiences with this?  It's something I haven't yet done, but I am eager to try it. It's not a question what is 'right' or 'wrong' , but I want to explore the possibities.
