Hi folks,
When using the transpose buttons + or -,  if I go up 1 or down 1 what key am I in, etc:

Depends on what key you're playing. If you're playing in the key of C, and you press the + button, you're in Db.

The transpose button changes the pitch of the keyboard in semi-tones. If you are playing in key of F and move the pitch up +2 by pressing the transpose button, you can still, play in key of F but because the keyboard pitch has moved up two semi tones it will sound like you are playing in key of G.
I think you need  bit more study on basics of music to grasp the concept of keys, pitch etc.

Another tip when playing, is that you can get some quite nice effects mid song, and at a suitable break by using both one of the next variations and /or hitting the transpose + key a few times which moves the whole song into a richer sound further up key.
To reset the transpose just hit both the Transpose +/- buttons together.

Here's the transposition table I created for my students, it may come in handy.

Music teacher's hat on - I agree with the comment above, in that it would be worth learning a bit of music theory, especially about degrees of the scale, intervals, keys and key signatures. If that all sounds like gobbledegook right now, get yourself a copy of 'Discovering Music Theory, Grade 1', published by the ABRSM - AKA 'Associated Board'. Work through it, maybe 15 -20 minutes a week and you'll be delighted just how much you'll understand when done! And then move up to Grade 2 and so on. Well worth the time and effort!
