Rcording guitars (guitar mode)

Hi folks!

I wonder if there's a way to record guitars just like the Korg Pa just like this:

If not...What's the best way to record an acoustic guitar for a new style? I mean not copying from other styles but creating our own? The quantization? The lenght of the notes? I've tried but the result is very bad...you can clearly note that's not a guitar...
