Dr. Mix is a favourite of mine- always has interesting content.
Following your second link I wonder if you've come across Spitfire Audio? They have controls for more dynamic control too.

What would further interest me is real-life examples of how the technology is being used. I suppose if you were a composer you could print out the music for session musicians exactly how you wanted it to sound.

Yamaha should now add such kind of vst as solo voices in the Genos. I imagine these sounds require a lot of real-time ressources. I would accept, in one or two registrations not to be able to use multipads, songs, left, R2, R3, and vocal harmony features for playing with style and 1 solo voice like this.
